Cheesy Potato Bake

'This is an example of a 'throw together' meal - something I came up with when I thought we had nothing for dinner. You don't have to have a recipe, or exact ingredients when it comes to making meals. Try experimenting with different foods and flavours. You never know what master dish or family favourite you may come up with! As with most recipes here, there are no exact amounts. Adjust to your preference. Goodluck and have fun!'

 

Ingredients

  • A mix of fresh chopped vege (I used broccoli, brussel sprouts, red onion, mushrooms purely because that's what I had in the fridge)

  • Potatoes

  • Salami (you could also use fresh meat/chicken (pre cooked) or tofu/lentils for a vegetarian option)

  • Cottage cheese

  • Edam cheese

  • Cracked pepper (add other herbs/spices as you choose)

  • Oil (I used walnut oil)

Method

  • Par boil potatoes. Drain. Slightly smash. Drizzle with oil and set aside

  • Chop rest of vege and place into large oven dish and drizzle with a little oil

  • Add potatoes to this dish

  • Slice salami and add to dish

  • Mix one 250g tub of cottage cheese through all above ingredients in oven dish

  • Top with grated edam cheese and cracked pepper

  • Place in preheated oven at 200 degrees C for approx 20mins or until potatoes look golden and crunchy

Serve.
