Chickpea + Haloumi Stir fry

'This is such a quick and easy dinner meal - whipped up in a matter of minutes. It’s packed full of vege and tastes great. This recipe can be adapted to suit the number of people you're cooking for and the vegetables you have on hand/love to eat. This is just a combo I love. I'm usually quite ad hoc with my cooking....no one meal is ever the same. I hope you enjoy!'

Ingredients

  • 1 can (390gm) chickpeas (drained and rinsed under cold water - most canned chickpeas are canned in brine. Rinsing this off removes excess sodium/salt).

  • Haloumi cheese - cut into squares and pan fried.

  • 2 medium courgettes sliced

  • Mushrooms, sliced (approx 2 handfuls)

  • 1 large capsicum sliced

  • 2 handfuls of spinach

  • Oil for dressing and/or stir-frying (I often use either walnut oil or a combo of roasted sesame oil and peanut oil as they all provide delicious flavour and are full of good fats).

Method

  • Pan fry sliced haloumi until golden brown on each side and set aside

  • Stir fry mushrooms, courgettes, capsicum

  • Add drained, rinsed chickpeas to the stir fry

  • Add haloumi to the stir fry

  • Add spinach at very end, so that is just lightly wilts

  • Flavour with cracked pepper and drizzle of oil.

  • Done. Just like that. Simple, delicious and nutritious.

Place in large serving bowl.
