Pesto Pasta
Pesto pasta is a delicious, quick and simple dinner meal for all the family to enjoy. It provides a well balanced meal of carbohydrate (pasta), protein (chicken) and plenty of veggies (mushroom/spinach/tomato). Quantities of ingredients will vary depending on how many you're cooking for. Add any extra veg you have to help bulk up the dish and add to your 5+ A Day. Any leftovers make a great lunch the next day.
Ingredients:
- Pasta/spaghetti (check cooking instructions on package - adjust quantity depending on numbers you're cooking for).
- Chicken (breast sliced up or pre sliced 'stir fry' pieces)
- Mushrooms (2 handfuls chopped)
- Courgette (2 medium, sliced)
- Cherry tomatoes (1 punnet)
- Fresh spinach (2 large handfuls)
- Basil pesto (to taste)
Method:
- Cook pasta until al dente, drain and set aside
- Pan fry chicken
- Add mushrooms and courgette to pan and stir fry
- Add cherry tomatoes and cook until just tender
- Add generous handful(s) of spinach at the very end and stir through until it just wilts
- Remove pan from heat and set aside
- Stir basil pesto through pasta
- Add chicken/stir fry vege mix to pasta and stir through
- Serve
